Father’s Day Weekend 2012

Today was Father’s Day and we had quite a busy weekend!

Starting out Friday with picking up this week’s CSA.

Summer CSA, Week 2

This week’s goodness:

  • 2lbs. black turtle beans
  • 1 bag corn chips (these things are amazing!)
  • 1 bunch of green onions
  • 1 bunch of cilantro
  • 1 head of red leaf lettuce
  • 1 head of bok choy
  • 3 slicing tomatoes
  • and a bag of snow peas.

Included were recipes for Stir-Fry, Huevos Rancheros and Black Bean and Corn Salad… Can’t wait to cook this stuff up!

After picking up our CSA we headed out to Emily’s next fast pitch softball game.  This is her first year playing and she is the pitcher!  The games are not terribly exciting, but she is learning and having fun.

Saturday Emily had a birthday party to go to so Jeremy and I hung out for a while, got his haircut and picked up some Captains’ tickets.  We are lucky enough to live within two miles of the stadium.  It is a great venue if you haven’t been, you should really check them out – Lake County Captains.  What a great time we had!  We met one of our friends, his daughter and a couple of his friends down there.  Both kids caught balls and we enjoyed the fireworks after.

The fireworks are always amazing.. and they do it both Friday and Saturday nights!

Today we spent the day doing what I wanted to do — YARDWORK, HA!  The kids were not so excited about it but it was Father’s Day, how could they tell me no? 🙂  After finishing it up, playing with the chickens and cleaning the coop – fun stuff, huh?   Jeremy had the final tryouts for the baseball all-star team.  They had to cut two more kids.  I’ll have more on this later (hopefully good news).

So, how do you top off a great CSA, fast pitch, Captains game, baseball, and yardwork?  How about with a FANTASTIC Father’s Day gift!  This year the kids surprised me with photos that one of our close friends help them take and put together.  I opened it up and for the first time in quite some time now — smiled, genuinely smiled.

    • Thanks. Sounds good… Still new to this blogging thing, so I’ll try to link up. We’ve been trying to have one meatless meal per week, but I’ve since told the kids that we will be having at least three meatless meals per week (thanks to “Forks over Knives). I can’t wait to try your leek and goat cheese quiche recipe, thanks!
